Apple Crumble Porridge

I have recently got back into porridge,  its great on those winter mornings ... and yes I know it's nearly summer but this week has been cold and miserable. So for a little more indulgent weekend porridge try this Apple Crumble Porridge recipe. Inspired by my love of apple crumble and missglamorazzi's Apple Crisp Oatmeal!!

Preheat your oven to 200C or 180C Fan.
First for the crumble mix, you can either do it by hand or use a food processor. I will explain both methods.
Using a food processor: 
It’s dead simple.  Just weigh out all your ingredients flour, caster sugar, butter, demerara sugar and cinnamon and add it to the food processor.  Then pulse for about 20 seconds and there you have it a quick crumble mix.

By hand:
It’s just as easy as long as you don’t mind getting your hands dirty.  First sift the flour into a mixing bowl and cut up the butter into small chunks this will make it easier to combine.  Rub the butter into the flour lightly with the tips of your fingers.  Once it resembles a fine crumb and there aren't any large chucks of butter left you can mix in the caster sugar, demerara sugar and cinnamon.

Now cut up the apple into small chunks and place in an oven dish, I like to add a little drop of water to the apples to help create a caramel like syrup. Then sprinkle over some crumble mix, remember there will be more than enough for 3 or 4 portions.  Put the remaining crumble mix in a container and put in the fridge or freezer for next time.  Sprinkle a little demerara sugar and cinnamon on top.
Place it in the oven for 5 minutes at 200C or 180C Fan. After 5 minutes add the almonds and return to the oven for another 5 minutes.
Meanwhile let’s make the porridge.  I like to make my porridge in the microwave but you may prefer it on the hob, whichever method is fine.
Put the oats and milk in a microwave safe bowl.  You can either use 300ml of milk or the half and half method with 150ml milk and 150ml water. Almond milk is also delicious with this recipe. The cheapest Oats I have found are Tesco Everyday Oats - 75p for a 1kg bag.
Cook in the microwave for 4 minutes. So you don’t get the horrible situation where your porridge has exploded all over the microwave ensure to stir it regularly – this is my method;

  • 2 minute then stir
  • 30 seconds then stir
  • 30 seconds then stir
  • 30 seconds then stir
  • 30 seconds then stir
  • Let it stand for 1 minute.

The crumble mix should now be ready, take it out of the oven and spoon it onto your porridge. Add any extra fruit or nuts that you like and ENJOY!!!

Remember it doesn't have to be apple crumble, why not try blackberry or rhubarb crumble porridge.
